Our latest anaerobic process coffee comes from Finca La Bastilla in Jinotega, Nicaragua. During harvest, farmers focused on selecting only the ripest, red cherries packed with natural sugars—perfect for this fermentation style. Once the cherries were sealed in stainless steel tanks and oxygen removed, those sugars became the fuel for the anaerobic process.
Throughout fermentation, it's then closely monitored for temperature and pH to ensure everything stayed on track. The result? A vibrant, clean cup that bursts with tropical fruit notes, layered sweetness reminiscent of dried fruit, and a delicate floral finish. This coffee is a true showcase of how careful processing can elevate flavor to something extraordinary.
