BACK AGAIN! This coffee comes from Chiapas, Mexico’s southernmost state, where smallholder farmers cultivate coffee in the lush Sierra Madre de Chiapas mountains. Growing at elevations between 1,200 and 1,750 masl, these farms benefit from steady rainfall, rich volcanic soils, and a dense forest canopy—perfect conditions for producing exceptional coffee.
Chiapas shares a border with Guatemala’s Huehuetenango, and you can taste the similarities in the cup: chocolate-forward, balanced sweetness, and subtle fruit undertones. It’s a classic profile that has made Chiapas one of Mexico’s most important coffee regions.
This lot was traditionally washed—a process that highlights clarity and structure. After pulping and fermentation, the coffee was washed clean and dried slowly on patios or raised beds. The result is a beautifully clean cup with notes of milk chocolate, roasted almond, gentle nuttiness, dried-fruit sweetness, and a hint of citrus.
