NEW RARE COFFEE
BACK AGAIN! This honey-processed coffee comes from Beneficio San Diego, Costa Rica’s most innovative mill, located in the Tarrazú region. The mill has been setting the standard for quality and sustainability since 1888, and today it works closely with local farmers to produce exceptional coffees.
For this lot, we started with perfectly ripe cherries, carefully selected during harvest. After depulping, we left the sticky mucilage—known as coffee honey—on the parchment to allow the natural sugars to infuse sweetness into the beans. The coffee was then dried slowly and evenly on African beds and patios, which helps develop complexity and balance.
The result is a cup that truly reflects the craft behind the honey process: layered sweetness, vibrant fruit notes, and a unique character that sets it apart. No two honey coffees are ever the same, and this one is an outstanding example of why we love this method.
